Hey there! So I make the famous albondigas soup and my entire family loves it! Its so quick and easy! I had so many of you asking for the recipe after I posted it so I thought better do a blog post! So here it is!
Serves 4
Ingredients:
Meatballs:
1lb ground beef
2 tsp minced garlic
1/4 cup fresh cilantro
1 1/2 tsp cumin
1 tsp salt
1/2 tsp pepper
1/4 cup Mexican rice (see bottom for recipe)
1 egg
Soup Mixture:
4 cups chicken broth
2 carrots sliced
3-4 celery stalks sliced (same size as carrots)
1 16oz can diced tomatoes undrained
1 tsp cumin
1 tsp Oregano
1/2 cup fresh cilantro
2 large russet potatoes peeled and diced
Instructions:
First make the meatballs. Combine all of the ingredients into a bowl and use your hand to combine the ingredients. Make sure that all of the ingredients are mixed well together and then form meatballs about 1-2 inches wide depending on how big you want them. Place in a large pot and brown them. But do not finish cooking them
through.
Next add the chicken broth, carrots, celery, tomatoes, potatoes, cumin, oregano, and cilantro.
Bring this to a boil and then reduce the heat to a low simmer.
Simmer on low for 20 minutes stirring occasionally. Serve immediately with tortillas on the side and an extra scoop of Mexican rice in the middle of the bowl (optional, but why wouldn't you?).
Mexican rice recipe:
Ingredients:
1 cup long grain white rice
1 tsp minced garlic
1 tsp cumin
4oz tomato sauce
2 cups chicken broth
2 tbsp olive oil
Instructions:
Add about 2 tbsp of olive oil and rice into a pot to brown. Next add the chicken broth, tomato sauce, about 2 tsp cumin, 1 tsp salt, and 1 tsp minced garlic. Bring to a boil and then cover and reduce heat to simmer and let cook for 25min.
