This is a classic favorite that my mom always made and I see no better way in have and cooking a whole chicken! Plus it is so easy! It pairs great with just about everything. I usually pair it with my homemade mashed potatoes or some delicious risotto!
Total time 2 hours
1 whole chicken (5-6 pounds)
First heat oven to 350 degrees F.
Then wash the bird with cool water and be sure to take out all the inside parts that come along with it!
Next place the bird in a large oven pan and coat it well with olive oil all over leaving a little extra in the bottom of the pan. Next season the chicken with the garlic salt and pepper! The place the fresh rosemary around the chicken, sticking a couple pieces inside the bird.
Lastly add the whole garlic cloves; still unpeeled; around the pan! (add as many as you would like...the garlic will roast and will be delicious to squeeze out over fresh bread or the chicken when it is done!
Place chicken in oven uncovered for 1 hour and 45 minutes!
Take out and enjoy! Also no need to peel the garlic cloves. Simply take them on one end and squeeze the roasted, now spreadable, garlic over your favorite bread or on top of the chicken!
