Easy Burrito Bowl Recipe

Made these super easy and delicious burrito bowls for my family and they loved them! They took about 30min total!




Ingredients:

  • 1lb lean ground beef

  • 1 cup white long grain rice

  • 2 cups chicken broth

  • cumin

  • garlic

  • salt

  • 8oz tomato sauce

  • olive oil

  • taco seasoning

  • 1-2 tomatos

  • 1 yellow onion

  • cilantro

  • lime

  • lemon

  • 1 can black beans

  • 1 ripe avocado

  • Shredded Cheese Mexican Cheeses

  • Salsa (your choice)

  • Sour Cream

Instructions:

First we want to make the rice! Add about 2 tbsp of olive oil and rice into a pot to brown. Next add the chicken broth, tomato sauce, about 2 tsp cumin, 1 tsp salt, and 1 tsp minced garlic. Bring to a boil and then cover and reduce heat to simmer and let cook for 25min.


Next lets cook our beef. On medium heat add 2tbsp olive oil to a pan with 2 tsp minced garlic and half of a chopped fine yellow onion. Let the onions cook until just before transparent then add your beef with taco seasoning and garlic salt.


While the beef is cooking prepare your toppings! Drain the black beans. Chop your tomatoes, other half yellow onion, and some cilantro mix in a bowl with lime and lemon juice and salt and pepper to taste. Slice your avocado.


Lastly check the rice, should be fully cooked and ready to eat! Build your bowl with all of the toppings and anything else you would like to add! Enjoy!
