Ok so I recently made this DELICIOUS recipe and many of you asked me to share it! I found it in the FOOD and WINE magazine, my favorite magazine, and I really love it! It is easy and quick! (Two of my favorites). I changed the recipe slightly from the magazine, not a lot just made it a tad bit easier!
The other great thing about this recipe it is extremely calorie friendly! It is a great snack during the day OR a great side dish for basically any summer dish! This heat in Southern California right now is no joke! So make this dish to help you stay nice and cool!
So I did the math and check it out this is about a 6-8 serving recipe...depending on how much you want to eat to yourself! Lol But the math I did is the calorie count estimate! There is about 389 calories in this entire dish!!!! How awesome is that? And what a great snack! You’re welcome!
Ingredients:
2 medium cucumbers
2Lbs tomatoes
1 whole lime
2tbsp or as many Fresh basil leaves as you want! ( I put a lot)
2-3 garlic cloves peeled and smashed
1/4 cup white wine vinegar
3/4 cup sliced red onion
1 1/4 tsp salt
2 bell peppers yellow and/or orange finely chopped
Extra Virgin Olive Oil (Optional but cmon its olive oil)
Directions:
Peel the cucumbers, throw the peels in a blender. Cut the cucumbers in half and take a spoon and remove the seeds and add them to the blender. Cut the cucumbers into 1/4 inch slices and place them in a bowl.
Next cut tomatoes in half and remove the seeds and place in the blender. Cut tomatoes into 3/4 inch pieces. (Don’t worry about making these look perfect they are going to taste the same lol). Throw tomatoes into the bowl with the cucumber.
Add about 1.5 cups of the tomatoes, the lime juice, a handful of basil, the garlic, and 2 tbsp of white wine vinegar to the blender. Process until smooth, about 30 seconds. Pour dressing through a fine wire mesh strainer into the bowl with the cucumber slices and tomatoes. Discard the solid left over in the strainer.
Next toss in the onion, remaining 2tbsp of vinegar, and bell peppers to the bowl. Toss well and add salt to taste!
Please serve with a drizzle of olive oil and more chopped fresh basil leaves!
