Pan Seared Halibut with Sautéed Spinach and Rice

Okay so last night I really wanted fish and it just so happen that halibut was on sale at the store! Yay for us! I will get straight to the point because I don't like reading long blog posts when I am hungry haha. This dinner was so easy and super quick and DELICIOUS. Ingredients:

  • 4 5oz pieces of fresh skinless Halibut

  • 10oz Baby Spinach

  • 1cup of Rice of your choice ( I made wild rice)

  • Fresh Garlic Cloves minced (I used about 6 because I love garlic)

  • Fresh Cilantro finely chopped about 1/4 cup

  • 1 Lemon

  • 1 small Shallot finely chopped

  • 2tbsp Olive Oil (or your choice of cooking oil)

  • 6tbsp butter

  • Sea Salt

  • Pepper

First start your rice this way it is done at the same time as the rest of your meal since it takes the longest!


Next lets put together our butter! Make sure the butter is soft at room temperature. Place into a small mixing bowl and add the cilantro, garlic, shallot, and zest the lemon to taste (I used the whole outside and then cut the lemon into wedges for garnishing). Mix the butter and ingredients well so they are fully combined and set aside. Next heat a non stick skillet and pat fish dry with a paper towel and season with sea salt and pepper. After pan is hot, add cooking oil! Then add the fish. Sear on one side for 4 minutes. Take tongs and carefully flip the fish to the other side. Add your butter in the pan and use a spoon to baste the fish with the butter for the next 4-5 minutes! Remove your fish and place on your plate serve with extra butter on top if desired.


Immediately throw in your spinach in the same pan with the same butter and mix around to coat it. Spinach will cook fast 2-3 minutes, so keep moving it.


Place rice and spinach next to fish. Garnish with cilantro sprigs and lemon wedges. Serve and eat immediately! Enjoy!!!
