Stuffed Bell Peppers

Hi Everyone! So I was recently sitting with a friend of mine and she had asked me what she should make for dinner using ground turkey. And I forgot that I have a ground turkey recipe I love and finally going to share it with you all. It is super easy and delicious!


  • 4 large bell peppers (any colors)

  • 1lb ground turkey

  • about 1 cup low fat (or not) shredded cheddar cheese

  • 2 tsp cumin

  • 1 tsp salt

  • 3 minced garlic cloves

  • 1 small yellow onion chopped

  • 1-2 tbsp olive oil


  • First heat your oven to 350 degrees. Wash your produce and chop off the tops of the bell peppers and clean out the white center carefully. Chop around the stem and save the pieces to add to the stuffing mixture!

  • Next add 1 tbsp of olive oil to pan on medium head. Add and saute the onions for 2-3 minutes till just before they turn transparent. Next add the garlic and cook for 1-2 minutes. It will start to smell amazing! Next add the turkey, cumin, salt, and the tops of the chopped bell peppers!

  • Throw the mixture into the bell peppers layering every so often with a layer of shredded cheese (the more the merrier, right?). Finally topping with shredded cheese on top.

  • Put your bell peppers in a narrow baking dish so they stand upright and bake for 15-20 minutes!

  • Serve immediately! I always like to serve with a side of rice or salad or just enjoy alone!
