Yummy Pumpkin Pancakes

Okay you all asked so here you go! I first made these about 4-5 years ago for a couple really good friends of mine and they were so excited about them that they have now stuck around for good! They are so much better than just regular pancakes (in my opinion) and they are perfect if you have a bunch of leftover pumpkin puree lying around! My family pureed so much pumpkin I got stuck with two extra jars and this recipe was a go to for me to use it up!


Ingredients:

  • 2 cups of flour

  • 2 teaspoons baking powder

  • 1 teaspoon baking soda

  • 3 tablespoons brown sugar

  • 1/2 teaspoon salt

  • 1/2 teaspoon ground ginger

  • 1 teaspoon ground cinnamon

  • 1/2 teaspoon ground all spice

  • 1/2 teaspoon ground nutmeg

  • 1 cup pumpkin puree

  • 1 1/2 cup whole milk

  • 1 egg

  • 2 tablespoons vegetable oil

Directions:

Throw all the dry ingredients in a bowl and make sure they are mixed well! Next add the wet ingredients! and mix but do not over mix! Next heat pan or griddle on medium heat. Spray with non-stick cooking spray and start pouring!
